Delicious and low-carb chocolate hazelnut crepes perfect for a keto diet.

- 1 cup almond flour
- 2 large eggs
- 1 cup unsweetened almond milk
- 2 tablespoons cocoa powder
- 1 tablespoon erythritol (or preferred keto sweetener)
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 tablespoons melted butter (plus extra for cooking)
- 1/2 cup sugar-free chocolate hazelnut spread
Instructions
- In a mixing bowl, whisk together the almond flour, cocoa powder, erythritol, and salt.
- In another bowl, beat the eggs and then add the almond milk and vanilla extract.
- Combine the wet and dry ingredients, mixing until smooth.
- Stir in the melted butter.
- Heat a non-stick skillet over medium heat and add a small amount of butter to coat the surface.
- Pour about 1/4 cup of the batter into the skillet, swirling to create a thin layer.
- Cook for 1-2 minutes until the edges lift and the bottom is set.
- Carefully flip and cook for another 1-2 minutes.
- Repeat with the remaining batter, adding more butter as needed.
- Once all crepes are cooked, spread a thin layer of sugar-free chocolate hazelnut spread on one half of each crepe, then fold or roll them up.
- Serve warm.
Notes
- For added flavor, mix in a pinch of cinnamon or a tablespoon of nut butter into the batter.
- Top with fresh berries or a dollop of whipped cream for a delicious contrast.
