Ingredients

  • 1 cup almond flour
  • 2 large eggs
  • 1 cup unsweetened almond milk
  • 2 tablespoons cocoa powder
  • 1 tablespoon erythritol (or preferred keto sweetener)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 tablespoons melted butter (plus extra for cooking)
  • 1/2 cup sugar-free chocolate hazelnut spread

Instructions

  1. In a mixing bowl, whisk together the almond flour, cocoa powder, erythritol, and salt.
  2. In another bowl, beat the eggs and then add the almond milk and vanilla extract.
  3. Combine the wet and dry ingredients, mixing until smooth.
  4. Stir in the melted butter.
  5. Heat a non-stick skillet over medium heat and add a small amount of butter to coat the surface.
  6. Pour about 1/4 cup of the batter into the skillet, swirling to create a thin layer.
  7. Cook for 1-2 minutes until the edges lift and the bottom is set.
  8. Carefully flip and cook for another 1-2 minutes.
  9. Repeat with the remaining batter, adding more butter as needed.
  10. Once all crepes are cooked, spread a thin layer of sugar-free chocolate hazelnut spread on one half of each crepe, then fold or roll them up.
  11. Serve warm.
