Ingredients

- 1 cup almond flour
- 2 tablespoons coconut flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 large eggs
- 1/4 cup unsweetened almond milk
- 1 teaspoon vanilla extract
- 1/4 cup sugar-free chocolate chips
- Butter or coconut oil for cooking
Instructions
- In a mixing bowl, combine almond flour, coconut flour, baking powder, and salt. Whisk until well blended.
- In another bowl, beat the eggs, then add almond milk and vanilla extract. Mix until smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Fold in the chocolate chips.
- Heat a non-stick skillet or griddle over medium heat and add a small amount of butter or coconut oil.
- Pour about 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes or until bubbles form on the surface, then flip and cook for an additional 1-2 minutes until golden brown.
- Repeat with the remaining batter, adding more butter or oil as needed.
Notes
- For added flavor, mix in a pinch of cinnamon or a tablespoon of unsweetened cocoa powder.
- Top pancakes with fresh berries or a dollop of whipped cream for a delicious twist.
