Ingredients

  • 1 cup almond flour
  • 2 tablespoons coconut flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/4 cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 1/4 cup sugar-free chocolate chips
  • Butter or coconut oil for cooking

Instructions

  1. In a mixing bowl, combine almond flour, coconut flour, baking powder, and salt. Whisk until well blended.
  2. In another bowl, beat the eggs, then add almond milk and vanilla extract. Mix until smooth.
  3. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Fold in the chocolate chips.
  4. Heat a non-stick skillet or griddle over medium heat and add a small amount of butter or coconut oil.
  5. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes or until bubbles form on the surface, then flip and cook for an additional 1-2 minutes until golden brown.
  6. Repeat with the remaining batter, adding more butter or oil as needed.

Notes
