Chocolate Chili Lava Cakes are a delightful dessert that combines the richness of chocolate with a spicy kick from cayenne pepper, creating a unique and indulgent treat.


Ingredients

  • 1/2 cup unsalted butter (1 stick)
  • 1 cup semi-sweet chocolate chips
  • 2 large eggs
  • 2 large egg yolks
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • 1/4 cup all-purpose flour
  • Powdered sugar (for dusting)
  • Vanilla ice cream (for serving, optional)

Instructions

  1. Preheat the oven to 425°F.
  2. Grease four ramekins with butter and dust with flour, tapping out the excess.
  3. In a microwave-safe bowl, melt the butter and chocolate chips together in 30-second intervals, stirring in between until smooth. Allow to cool slightly.
  4. In a large mixing bowl, whisk together the eggs, egg yolks, granulated sugar, vanilla extract, and salt until well combined and slightly frothy.
  5. Gradually add the melted chocolate mixture to the egg mixture, stirring continuously until fully incorporated.
  6. Sift in the flour and cayenne pepper, folding gently until just combined. Do not overmix.
  7. Divide the batter evenly among the prepared ramekins. Place them on a baking sheet for easier handling.
  8. Bake for 12-14 minutes, until the edges are firm but the center is still soft.
  9. Remove from the oven and let cool for 1 minute.
  10. Carefully invert each ramekin onto a plate and gently lift to release the cake.
  11. Dust with powdered sugar and serve warm, ideally with a scoop of vanilla ice cream.
