- 1 pound chicken livers, cleaned and trimmed
- 4 ounces unsalted butter, divided
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme leaves
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup heavy cream
- 1/4 cup hazelnuts, toasted and chopped
- 4 slices bacon, cooked until crispy and crumbled
- 2 tablespoons balsamic vinegar
- Fresh parsley, for garnish
- Crackers or toasted bread, for serving
Instructions
- In a skillet over medium heat, melt 2 tablespoons of butter. Add the chopped onion and cook until softened, about 5 minutes. Stir in the minced garlic and thyme, cooking for an additional minute until fragrant.
- Increase the heat to medium-high and add the cleaned chicken livers to the skillet. Season with salt and pepper. Cook for about 5-7 minutes, stirring occasionally, until the livers are browned on the outside but still slightly pink in the center.
- Remove the skillet from heat and let the mixture cool for a few minutes. Transfer the liver mixture to a food processor. Add the remaining 2 ounces of butter and heavy cream. Blend until smooth and creamy.
- Taste and adjust seasoning if necessary. Spoon the mousse into a serving bowl and smooth the top.
- In a small bowl, combine the crumbled bacon, chopped hazelnuts, and balsamic vinegar. Sprinkle this mixture over the mousse.
- Garnish with fresh parsley and serve with crackers or toasted bread.

- For a smoother texture, strain the mousse through a fine-mesh sieve after blending.
- Experiment with different herbs such as rosemary or sage for added flavor in the mousse.
