Description

A delicious Chicken Liver Mousse topped with crispy bacon, toasted hazelnuts, and a drizzle of balsamic vinegar, perfect for serving with crackers or toasted bread.


Ingredients

  • 1 pound chicken livers, cleaned and trimmed
  • 4 ounces unsalted butter, divided
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup heavy cream
  • 1/4 cup hazelnuts, toasted and chopped
  • 4 slices bacon, cooked until crispy and crumbled
  • 2 tablespoons balsamic vinegar
  • Fresh parsley, for garnish
  • Crackers or toasted bread, for serving

Instructions

  1. In a skillet over medium heat, melt 2 tablespoons of butter. Add the chopped onion and cook until softened, about 5 minutes. Stir in the minced garlic and thyme, cooking for an additional minute until fragrant.
  2. Increase the heat to medium-high and add the cleaned chicken livers to the skillet. Season with salt and pepper. Cook for about 5-7 minutes, stirring occasionally, until the livers are browned on the outside but still slightly pink in the center.
  3. Remove the skillet from heat and let the mixture cool for a few minutes. Transfer the liver mixture to a food processor. Add the remaining 2 ounces of butter and heavy cream. Blend until smooth and creamy.
  4. Taste and adjust seasoning if necessary. Spoon the mousse into a serving bowl and smooth the top.
  5. In a small bowl, combine the crumbled bacon, chopped hazelnuts, and balsamic vinegar. Sprinkle this mixture over the mousse.
  6. Garnish with fresh parsley and serve with crackers or toasted bread.
