Ingredients

- 2 whole mackerel, cleaned and scaled (about 1 pound each)
- 1 cup cherry blossoms (edible, rinsed)
- 2 tablespoons olive oil
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 teaspoon grated fresh ginger
- 1 teaspoon garlic, minced
- 1 teaspoon sesame oil
- Salt and pepper to taste
- Lemon wedges for serving
Instructions
- Preheat your grill or oven to 400°F (200°C). If using a grill, oil the grates to prevent sticking.
- In a small bowl, whisk together the olive oil, soy sauce, honey, grated ginger, minced garlic, sesame oil, salt, and pepper.
- Place the cleaned mackerel on a large plate or baking dish and pour the marinade over them, ensuring they are well coated. Let them marinate for at least 15 minutes.
- If grilling, place the mackerel directly on the grill and cook for about 5-7 minutes per side, or until the fish flakes easily with a fork. If baking, place the mackerel on a lined baking sheet and bake for 20-25 minutes, or until cooked through.
- During the last few minutes of cooking, sprinkle the cherry blossoms over the mackerel to lightly wilt them.
- Remove the mackerel from the grill or oven and let it rest for a few minutes. Serve with lemon wedges on the side.
Notes
- For a smoky flavor, add a few wood chips to your grill.
- Try substituting the mackerel with salmon or trout for a different taste.
