Ingredients

  • 2 whole mackerel, cleaned and scaled (about 1 pound each)
  • 1 cup cherry blossoms (edible, rinsed)
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon garlic, minced
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  1. Preheat your grill or oven to 400°F (200°C). If using a grill, oil the grates to prevent sticking.
  2. In a small bowl, whisk together the olive oil, soy sauce, honey, grated ginger, minced garlic, sesame oil, salt, and pepper.
  3. Place the cleaned mackerel on a large plate or baking dish and pour the marinade over them, ensuring they are well coated. Let them marinate for at least 15 minutes.
  4. If grilling, place the mackerel directly on the grill and cook for about 5-7 minutes per side, or until the fish flakes easily with a fork. If baking, place the mackerel on a lined baking sheet and bake for 20-25 minutes, or until cooked through.
  5. During the last few minutes of cooking, sprinkle the cherry blossoms over the mackerel to lightly wilt them.
  6. Remove the mackerel from the grill or oven and let it rest for a few minutes. Serve with lemon wedges on the side.
