Description

A delicious and easy-to-make low-carb cheeseburger casserole that is perfect for a hearty meal.


Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 4 large eggs
  • 1 cup cauliflower rice
  • 1/4 cup chopped green onions (for garnish)

Instructions

  1. Preheat the oven to 350°F.
  2. In a large skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned and the onion is translucent, about 5-7 minutes. Drain any excess fat.
  3. Stir in the salt, black pepper, paprika, and diced tomatoes. Cook for an additional 2-3 minutes until heated through.
  4. In a large bowl, combine the cooked beef mixture, cauliflower rice, sour cream, and 2/3 of the shredded cheddar cheese. Mix well.
  5. In a separate bowl, whisk the eggs until well combined. Pour the eggs into the beef mixture and stir until everything is evenly coated.
  6. Transfer the mixture to a greased 9×13-inch baking dish. Sprinkle the remaining cheddar cheese on top.
  7. Bake in the preheated oven for 30-35 minutes, or until the casserole is set and the cheese is bubbly and golden.
  8. Let the casserole cool for 5-10 minutes before serving. Garnish with chopped green onions.

Notes

  • For added flavor, mix in some diced pickles or mustard into the beef mixture before baking.
  • To make it spicier, add a teaspoon of chili powder or some diced jalapeños to the beef mixture.
