Description
A delicious and easy-to-make low-carb cheeseburger casserole that is perfect for a hearty meal.
Ingredients
Scale
- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 cup diced tomatoes (canned or fresh)
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 4 large eggs
- 1 cup cauliflower rice
- 1/4 cup chopped green onions (for garnish)
Instructions
- Preheat the oven to 350°F.
- In a large skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned and the onion is translucent, about 5-7 minutes. Drain any excess fat.
- Stir in the salt, black pepper, paprika, and diced tomatoes. Cook for an additional 2-3 minutes until heated through.
- In a large bowl, combine the cooked beef mixture, cauliflower rice, sour cream, and 2/3 of the shredded cheddar cheese. Mix well.
- In a separate bowl, whisk the eggs until well combined. Pour the eggs into the beef mixture and stir until everything is evenly coated.
- Transfer the mixture to a greased 9×13-inch baking dish. Sprinkle the remaining cheddar cheese on top.
- Bake in the preheated oven for 30-35 minutes, or until the casserole is set and the cheese is bubbly and golden.
- Let the casserole cool for 5-10 minutes before serving. Garnish with chopped green onions.
Notes
- For added flavor, mix in some diced pickles or mustard into the beef mixture before baking.
- To make it spicier, add a teaspoon of chili powder or some diced jalapeños to the beef mixture.
