Ingredients

- 1 cup heavy whipping cream
- 1/2 cup unsweetened almond milk
- 1/4 cup powdered erythritol (or preferred keto sweetener)
- 1 teaspoon vanilla extract
- 1/2 cup fresh strawberries, hulled and sliced
- 1/2 cup dry champagne or sparkling wine (ensure it’s low in sugar)
- Fresh mint leaves for garnish (optional)
Instructions
- In a large mixing bowl, combine the heavy whipping cream, almond milk, powdered erythritol, and vanilla extract. Using an electric mixer, whip the mixture on medium-high speed until soft peaks form, about 3-5 minutes.
- Gently fold in the sliced strawberries, being careful not to deflate the whipped cream.
- Slowly drizzle in the champagne while continuing to fold the mixture until well combined.
- Divide the syllabub into serving glasses or bowls.
- Chill in the refrigerator for at least 30 minutes to allow the flavors to meld.
- Before serving, garnish with fresh mint leaves if desired.
Notes
- For a different flavor, substitute the strawberries with raspberries or blueberries.
- To make it more festive, add a splash of lemon or lime juice for a citrus twist.
