- 1 cup almond flour
- 1/4 cup unsweetened cocoa powder
- 1/4 cup granulated erythritol
- 1/2 teaspoon salt
- 1/4 cup unsalted butter, melted
- 1 (8-ounce) package cream cheese, softened
- 1/2 cup powdered erythritol
- 1 teaspoon vanilla extract
- 1 large egg
- 1/2 cup heavy cream
- 1/4 cup sugar-free caramel sauce
- 1/2 cup chopped pecans
Instructions
- Preheat the oven to 325°F.
- Line a muffin tin with paper liners or grease with cooking spray.
- In a mixing bowl, combine almond flour, cocoa powder, granulated erythritol, and salt.
- Stir in the melted butter until the mixture resembles wet sand.
- Press about 1 tablespoon of the crust mixture into the bottom of each muffin cup, packing it tightly.
- Bake for 10 minutes, then remove from the oven and let cool.
- In another bowl, beat the softened cream cheese with powdered erythritol and vanilla extract until smooth.
- Add the egg and mix until well combined.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
- Spoon the cheesecake filling over the cooled crusts, filling each cup about 3/4 full.
- Bake for an additional 20-25 minutes, or until the centers are set but still slightly jiggly.
- Remove from the oven and let cool to room temperature.
- Refrigerate for at least 2 hours to set.
- Before serving, drizzle sugar-free caramel sauce over the tops and sprinkle with chopped pecans.
