A delicious and healthy vegetarian recipe for butternut squash falafel, perfect for a tasty meal.

- 2 cups butternut squash, peeled and cubed
- 1 cup canned chickpeas, drained and rinsed
- 1/2 cup fresh parsley, chopped
- 1/4 cup onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon lemon juice
- 1/4 cup all-purpose flour (or more as needed)
- Oil for frying
Instructions
- Preheat your oven to 400°F (200°C). Spread the cubed butternut squash on a baking sheet and roast for about 25 minutes, or until tender. Allow to cool slightly.
- In a food processor, combine the roasted butternut squash, chickpeas, parsley, onion, garlic, cumin, coriander, paprika, salt, pepper, and lemon juice. Pulse until the mixture is well combined but still slightly chunky.
- Transfer the mixture to a bowl and gradually stir in the flour until the mixture holds together. If it’s too wet, add more flour, a tablespoon at a time.
- Form the mixture into small balls or patties, about 1-2 inches in diameter.
- In a large skillet, heat about 1/4 inch of oil over medium heat. Once hot, carefully add the falafel and fry for about 3-4 minutes on each side, or until golden brown and crispy. You may need to do this in batches.
- Remove the falafel from the skillet and place them on a paper towel-lined plate to drain excess oil.
Notes
- For a healthier option, bake the falafel at 375°F (190°C) for 20-25 minutes, flipping halfway through, instead of frying.
- Serve the falafel in pita bread with tahini sauce, fresh vegetables, and pickles for a delicious sandwich.
