Description

A delicious and healthy vegetarian recipe for butternut squash falafel, perfect for a tasty meal.


Ingredients

  • 2 cups butternut squash, peeled and cubed
  • 1 cup canned chickpeas, drained and rinsed
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 1/4 cup all-purpose flour (or more as needed)
  • Oil for frying

Instructions

  1. Preheat your oven to 400°F (200°C). Spread the cubed butternut squash on a baking sheet and roast for about 25 minutes, or until tender. Allow to cool slightly.
  2. In a food processor, combine the roasted butternut squash, chickpeas, parsley, onion, garlic, cumin, coriander, paprika, salt, pepper, and lemon juice. Pulse until the mixture is well combined but still slightly chunky.
  3. Transfer the mixture to a bowl and gradually stir in the flour until the mixture holds together. If it’s too wet, add more flour, a tablespoon at a time.
  4. Form the mixture into small balls or patties, about 1-2 inches in diameter.
  5. In a large skillet, heat about 1/4 inch of oil over medium heat. Once hot, carefully add the falafel and fry for about 3-4 minutes on each side, or until golden brown and crispy. You may need to do this in batches.
  6. Remove the falafel from the skillet and place them on a paper towel-lined plate to drain excess oil.

Notes

  • For a healthier option, bake the falafel at 375°F (190°C) for 20-25 minutes, flipping halfway through, instead of frying.
  • Serve the falafel in pita bread with tahini sauce, fresh vegetables, and pickles for a delicious sandwich.
