Description

Buffalo Cauliflower Bites with Blue Cheese Dip are irresistible!


Ingredients

  • 1 head of cauliflower, cut into bite-sized florets
  • 1 cup all-purpose flour
  • 1 cup water
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup buffalo sauce
  • 2 tablespoons olive oil
  • For the Blue Cheese Dip:
  • 1/2 cup blue cheese, crumbled
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 450°F. Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, water, garlic powder, onion powder, smoked paprika, salt, and black pepper until smooth.
  3. Add the cauliflower florets to the batter, tossing until they are evenly coated.
  4. Spread the coated cauliflower on the prepared baking sheet in a single layer. Bake for 20 minutes, flipping halfway through, until golden and crispy.
  5. While the cauliflower is baking, prepare the blue cheese dip. In a medium bowl, combine the crumbled blue cheese, sour cream, mayonnaise, lemon juice, garlic powder, and salt and pepper. Mix until well combined and creamy.
  6. After 20 minutes, remove the cauliflower from the oven and drizzle with buffalo sauce, tossing to coat evenly. Return to the oven and bake for an additional 10 minutes.
  7. Serve the buffalo cauliflower bites hot with the blue cheese dip on the side.

Notes

  • For a spicier kick, add extra buffalo sauce to the cauliflower before serving.
  • You can also substitute the blue cheese with ranch dressing for a different flavor profile.
  • If you prefer a gluten-free option, use a gluten-free flour blend in place of all-purpose flour.
