Buffalo Cauliflower Bites with Blue Cheese Dip are irresistible!

- 1 head of cauliflower, cut into bite-sized florets
- 1 cup all-purpose flour
- 1 cup water
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup buffalo sauce
- 2 tablespoons olive oil
- For the Blue Cheese Dip:
- 1/2 cup blue cheese, crumbled
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1 tablespoon lemon juice
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 450°F. Line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, water, garlic powder, onion powder, smoked paprika, salt, and black pepper until smooth.
- Add the cauliflower florets to the batter, tossing until they are evenly coated.
- Spread the coated cauliflower on the prepared baking sheet in a single layer. Bake for 20 minutes, flipping halfway through, until golden and crispy.
- While the cauliflower is baking, prepare the blue cheese dip. In a medium bowl, combine the crumbled blue cheese, sour cream, mayonnaise, lemon juice, garlic powder, and salt and pepper. Mix until well combined and creamy.
- After 20 minutes, remove the cauliflower from the oven and drizzle with buffalo sauce, tossing to coat evenly. Return to the oven and bake for an additional 10 minutes.
- Serve the buffalo cauliflower bites hot with the blue cheese dip on the side.
Notes
- For a spicier kick, add extra buffalo sauce to the cauliflower before serving.
- You can also substitute the blue cheese with ranch dressing for a different flavor profile.
- If you prefer a gluten-free option, use a gluten-free flour blend in place of all-purpose flour.
