  • 2 boneless, skinless chicken breasts (about 1 pound)
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, diced
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon dried oregano
  • 1/4 cup shredded mozzarella cheese

Instructions

  1. Preheat the grill to medium-high heat.
  2. Rub the chicken breasts with olive oil and season with salt and pepper on both sides.
  3. Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F. Remove from the grill and let it rest for 5 minutes.
  4. While the chicken is resting, prepare the bruschetta topping. In a medium bowl, combine the diced tomatoes, basil, garlic, balsamic vinegar, and oregano. Mix well and season with salt and pepper to taste.
