- 2 boneless, skinless chicken breasts (about 1 pound)
- 1 teaspoon olive oil
- Salt and pepper to taste
- 1 cup cherry tomatoes, diced
- 1/4 cup fresh basil, chopped
- 2 cloves garlic, minced
- 1 tablespoon balsamic vinegar
- 1/2 teaspoon dried oregano
- 1/4 cup shredded mozzarella cheese
Instructions
- Preheat the grill to medium-high heat.
- Rub the chicken breasts with olive oil and season with salt and pepper on both sides.
- Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F. Remove from the grill and let it rest for 5 minutes.
- While the chicken is resting, prepare the bruschetta topping. In a medium bowl, combine the diced tomatoes, basil, garlic, balsamic vinegar, and oregano. Mix well and season with salt and pepper to taste.
- Slice the grilled chicken breasts and place them on a serving platter. Top each slice with the bruschetta mixture and sprinkle with shredded mozzarella cheese.
- Optional: Return the platter to the grill for 2-3 minutes to melt the cheese slightly.
- Serve immediately and enjoy!

- For a spicy kick, add a pinch of red pepper flakes to the bruschetta mixture.
