Description

A delicious and creamy black garlic cauliflower mash served with flavorful pork strips.


Ingredients

Scale
  • 2 medium heads of cauliflower, cut into florets
  • 1 tablespoon olive oil
  • 1 teaspoon salt, divided
  • 1/2 teaspoon black pepper
  • 6 cloves black garlic, peeled
  • 1/4 cup unsweetened almond milk (or regular milk)
  • 1 pound pork tenderloin, sliced into strips
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, bring salted water to a boil. Add the cauliflower florets and cook for about 10-12 minutes, or until tender. Drain and set aside.
  2. In the same pot, add the black garlic and olive oil. Cook over low heat for 2-3 minutes until fragrant.
  3. Add the cooked cauliflower back to the pot along with the almond milk, 1/2 teaspoon salt, and black pepper. Use an immersion blender or a potato masher to blend until smooth and creamy. Adjust seasoning if necessary. Keep warm.
  4. In a skillet over medium-high heat, add the pork strips. Season with garlic powder, onion powder, and remaining 1/2 teaspoon salt. Cook for about 5-7 minutes until the pork is browned and cooked through.
  5. In a small bowl, mix together the soy sauce, honey, and apple cider vinegar. Pour this mixture over the cooked pork strips and cook for an additional 2-3 minutes, allowing the sauce to thicken slightly.
  6. To serve, spoon the black garlic cauliflower mash onto plates and top with the pork strips. Garnish with fresh parsley.

Notes

  • For a creamier mash, add an extra tablespoon of almond milk or a pat of butter.
  • Try substituting chicken or tofu for the pork for a different protein option.
