Description

Delicious and easy-to-make Beef Wellington Bites, perfect for parties.


Ingredients

  • 1 pound beef tenderloin, trimmed and cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup mushrooms, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)
  • 1/4 cup Dijon mustard
  • 1 package (1 pound) puff pastry, thawed
  • 1 egg, beaten (for egg wash)
  • 1/4 cup pâté (optional)
  • Flour, for dusting

Instructions

  1. Preheat the oven to 400°F.
  2. In a skillet over medium-high heat, heat the olive oil.
  3. Season the beef cubes with salt and pepper, then sear them in the skillet for about 2-3 minutes until browned on all sides. Remove from heat and let cool.
  4. In the same skillet, add the chopped mushrooms and garlic. Sauté for about 5-7 minutes until the mushrooms are browned and any liquid has evaporated. Stir in the thyme and let cool.
  5. Once the beef and mushroom mixture are cool, spread the Dijon mustard over the beef cubes. If using, spread a thin layer of pâté over each cube.
  6. Roll out the puff pastry on a lightly floured surface to about 1/8-inch thick. Cut into squares, approximately 3 inches by 3 inches.
  7. Place a beef cube in the center of each square, then fold the pastry over to seal, pinching the edges together.
  8. Place the bites seam-side down on a baking sheet lined with parchment paper.
  9. Brush the tops of the pastry with the beaten egg.
  10. Bake for 15-20 minutes or until the pastry is golden brown and puffed.
  11. Let cool slightly before serving.

Notes

  • For a twist, try adding a slice of cheese, such as Gruyère or cheddar, inside the pastry with the beef.
  • Alternatively, you can substitute the beef with sautéed spinach and feta for a vegetarian option.
