Ingredients

  • 8 ounces konjac noodles (shirataki noodles), rinsed and drained
  • 1 cup bamboo shoots, sliced
  • 1 tablespoon sesame oil
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • 2 green onions, chopped
  • 1 tablespoon sesame seeds
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat the sesame oil over medium heat. Add the minced garlic and ginger, sautéing for about 1 minute until fragrant.
  2. Add the sliced bamboo shoots to the skillet and stir-fry for 2-3 minutes until heated through.
  3. Add the rinsed konjac noodles to the skillet, stirring to combine with the bamboo shoots. Cook for another 2-3 minutes, allowing the noodles to absorb the flavors.
  4. Pour in the soy sauce and rice vinegar, mixing well to coat all the ingredients. Cook for an additional 2 minutes.
  5. Season with salt and pepper to taste, then remove from heat.
  6. Serve hot, garnished with chopped green onions and a sprinkle of sesame seeds.

Notes

  • For a spicier kick, add a teaspoon of chili paste or red pepper flakes while cooking.
