- 8 ounces konjac noodles (shirataki noodles), rinsed and drained
- 1 cup bamboo shoots, sliced
- 1 tablespoon sesame oil
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon rice vinegar
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- 2 green onions, chopped
- 1 tablespoon sesame seeds
- Salt and pepper to taste
Instructions
- In a large skillet, heat the sesame oil over medium heat. Add the minced garlic and ginger, sautéing for about 1 minute until fragrant.
- Add the sliced bamboo shoots to the skillet and stir-fry for 2-3 minutes until heated through.
- Add the rinsed konjac noodles to the skillet, stirring to combine with the bamboo shoots. Cook for another 2-3 minutes, allowing the noodles to absorb the flavors.
- Pour in the soy sauce and rice vinegar, mixing well to coat all the ingredients. Cook for an additional 2 minutes.
- Season with salt and pepper to taste, then remove from heat.
- Serve hot, garnished with chopped green onions and a sprinkle of sesame seeds.
Notes
- For a spicier kick, add a teaspoon of chili paste or red pepper flakes while cooking.
- You can also substitute the bamboo shoots with sliced bell peppers or zucchini for a different texture and flavor.
