Description

Baked Feta Pasta is your next creamy delight!

Ingredients

Scale
  • 8 ounces pasta (your choice of penne or rigatoni)
  • 8 ounces block feta cheese
  • 1 pint cherry tomatoes
  • 1/4 cup extra virgin olive oil
  • 4 cloves garlic, finely chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • Fresh basil leaves for garnish
  • Grated Parmesan cheese for topping (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a spacious baking dish, arrange the cherry tomatoes and place the block of feta cheese in the center.
  3. Drizzle the olive oil over the tomatoes and feta, then sprinkle the minced garlic, dried oregano, red pepper flakes, salt, and pepper evenly across the dish.
  4. Gently mix the tomatoes and feta to ensure they are well coated in the oil and seasonings.
  5. Bake in the preheated oven for about 30 minutes, until the tomatoes burst and the feta cheese becomes soft and golden around the edges.
  6. While the mixture bakes, cook the pasta according to the package directions until it reaches an al dente texture. Drain the pasta and set it aside.
  7. Once the baking time is complete, take the dish out of the oven.
  8. Use a fork to break apart the feta and stir it into the tomatoes, creating a luscious, creamy sauce.
  9. Incorporate the drained pasta into the baking dish, tossing everything together until the pasta is thoroughly coated with the sauce.
  10. Serve the dish hot, garnished with fresh basil leaves and a sprinkle of grated Parmesan cheese if you like.

Notes

  • Feel free to adjust the amount of red pepper flakes based on your spice preference.
  • For a vegetarian option, ensure the Parmesan cheese is rennet-free.
