- 1/2 cup cooked bacon, crumbled
- 1/4 cup pickled jalapeños, chopped (adjust to taste)
- 3/4 cup buttermilk
Instructions
- Preheat your oven to 425°F. Line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and black pepper.
- Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
- Stir in the shredded cheddar cheese, crumbled bacon, and chopped jalapeños until evenly distributed.
- Pour in the buttermilk and gently mix until just combined. Do not overmix; the dough should be slightly sticky.
- Using a spoon or ice cream scoop, drop heaping tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 15-18 minutes, or until the tops are golden brown.
- Remove from the oven and let cool for a few minutes before serving.
Notes
- For a spicier kick, use fresh jalapeños instead of pickled.
- To make these biscuits even richer, try adding a tablespoon of honey to the buttermilk for a hint of sweetness.
