Instructions

  1. Preheat your oven to 425°F. Line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and black pepper.
  3. Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
  4. Stir in the shredded cheddar cheese, crumbled bacon, and chopped jalapeños until evenly distributed.
  5. Pour in the buttermilk and gently mix until just combined. Do not overmix; the dough should be slightly sticky.
  6. Using a spoon or ice cream scoop, drop heaping tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
