- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 large egg
- 1/4 cup water
- 1 cup cooked shredded chicken
- 1 ripe avocado, mashed
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
- 1/4 cup shredded cheese (optional)
- Fresh cilantro, for garnish
Instructions
- In a mixing bowl, combine almond flour, baking powder, and salt. Mix well.
- In a separate bowl, whisk together the egg and water. Add the egg mixture to the dry ingredients and stir until a dough forms.
- Divide the dough into 4 equal portions and shape each portion into a flat disc about 1/2 inch thick.
- Heat a non-stick skillet over medium heat. Cook the arepas for about 4-5 minutes on each side, or until golden brown and cooked through.
- In a bowl, mix the shredded chicken, mashed avocado, garlic powder, onion powder, and black pepper until well combined.
- Once the arepas are cooked, slice them open and fill each with the avocado chicken mixture. If desired, sprinkle shredded cheese inside before closing.
- Garnish with fresh cilantro and serve warm.
