- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, chilled and cubed
- 3 tablespoons cold water
- 4 ounces pancetta, diced
- 1 can (14 ounces) artichoke hearts, drained and chopped
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine the flour and salt. Add the chilled butter and mix until the mixture resembles coarse crumbs. Stir in the cold water, one tablespoon at a time, until the dough comes together. Form the dough into a ball, wrap in plastic wrap, and refrigerate for 30 minutes.
- On a lightly floured surface, roll out the dough to fit a 9-inch tart pan. Press the dough into the pan and trim any excess. Prick the bottom with a fork and bake for 10 minutes. Remove from the oven and set aside.
- In a skillet over medium heat, cook the diced pancetta until crispy, about 5-7 minutes. Remove from heat and let cool slightly.
- In a large bowl, combine the chopped artichoke hearts, ricotta cheese, Parmesan cheese, egg, garlic powder, black pepper, and red pepper flakes (if using). Stir in the cooked pancetta.
- Pour the artichoke mixture into the pre-baked tart shell, spreading it evenly.
- Bake for an additional 25-30 minutes, or until the filling is set and the top is lightly golden.
- Remove from the oven and let cool for 10 minutes before slicing. Garnish with fresh parsley before serving.
Notes
- For a vegetarian version, omit the pancetta and add sautéed mushrooms or spinach for added flavor.
- Experiment with different cheeses, such as feta or goat cheese, to customize the flavor profile of the tart.
