- 2 cups almond flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon sea salt
- 4 large eggs
- 1/2 cup granulated sugar
- 1 teaspoon pure vanilla extract
- 1/4 cup unsweetened almond milk
- 1/2 cup heavy whipping cream
- 1/4 cup confectioners’ sugar
- 1 teaspoon vanilla extract (for the cream)
- 1/4 cup rich chocolate ganache (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 15×10-inch jelly roll pan by lining it with parchment paper and lightly greasing it.
- In a mixing bowl, combine almond flour, cocoa powder, baking powder, and sea salt, whisking them together until well blended.
- In another large bowl, whisk the eggs and granulated sugar together until the mixture becomes light and fluffy, about 5 minutes.
- Add in the vanilla extract and almond milk, mixing until combined.
- Gradually incorporate the dry ingredients into the egg mixture, folding gently to maintain the airiness of the batter.
- Pour the mixture into the prepared pan, smoothing it out evenly.
- Bake for 12-15 minutes, or until a toothpick inserted in the center comes out clean.
- After baking, allow the cake to cool in the pan for 5 minutes before carefully flipping it onto a clean kitchen towel dusted with confectioners’ sugar.
- Remove the parchment paper and roll the cake up with the towel from one of the shorter ends. Let it cool completely while rolled.
- Meanwhile, whip the heavy cream with confectioners’ sugar and vanilla extract until stiff peaks form.
- Once the cake has cooled, gently unroll it and spread the whipped cream filling evenly across the surface.
- Roll the cake back up without the towel, placing it seam-side down on a serving dish.
- Finish by drizzling the top with chocolate ganache before slicing and serving.
Notes
- For an extra festive flair, sprinkle crushed peppermint candies on top of the ganache.
- Swap the whipped cream filling for a layer of raspberry or strawberry preserves for a refreshing twist.
