Ingredients

  • 2 cups almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon sea salt
  • 4 large eggs
  • 1/2 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1/4 cup unsweetened almond milk
  • 1/2 cup heavy whipping cream
  • 1/4 cup confectioners’ sugar
  • 1 teaspoon vanilla extract (for the cream)
  • 1/4 cup rich chocolate ganache (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 15×10-inch jelly roll pan by lining it with parchment paper and lightly greasing it.
  2. In a mixing bowl, combine almond flour, cocoa powder, baking powder, and sea salt, whisking them together until well blended.
  3. In another large bowl, whisk the eggs and granulated sugar together until the mixture becomes light and fluffy, about 5 minutes.
  4. Add in the vanilla extract and almond milk, mixing until combined.
  5. Gradually incorporate the dry ingredients into the egg mixture, folding gently to maintain the airiness of the batter.
  6. Pour the mixture into the prepared pan, smoothing it out evenly.
  7. Bake for 12-15 minutes, or until a toothpick inserted in the center comes out clean.
  8. After baking, allow the cake to cool in the pan for 5 minutes before carefully flipping it onto a clean kitchen towel dusted with confectioners’ sugar.
  9. Remove the parchment paper and roll the cake up with the towel from one of the shorter ends. Let it cool completely while rolled.
  10. Meanwhile, whip the heavy cream with confectioners’ sugar and vanilla extract until stiff peaks form.
  11. Once the cake has cooled, gently unroll it and spread the whipped cream filling evenly across the surface.
  12. Roll the cake back up without the towel, placing it seam-side down on a serving dish.
  13. Finish by drizzling the top with chocolate ganache before slicing and serving.

Notes

  • For an extra festive flair, sprinkle crushed peppermint candies on top of the ganache.
