Ingredients

  • 2 (6-ounce) trout fillets, skin on
  • 1 cup almonds, finely chopped
  • 1/2 cup breadcrumbs
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/4 cup unsalted butter, softened
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh dill, chopped

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a shallow dish, combine the finely chopped almonds, breadcrumbs, salt, and black pepper.
  3. Brush the trout fillets with olive oil on both sides.
  4. Press the skin side of each fillet into the almond mixture to coat it evenly.
  5. Place the coated trout fillets, skin side down, on the prepared baking sheet.
  6. Bake in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork and the crust is golden brown.
  7. While the trout is baking, prepare the lemon dill butter by mixing the softened butter, lemon juice, lemon zest, and chopped dill in a small bowl until well combined.
  8. Once the trout is done, remove it from the oven and let it rest for a couple of minutes.
  9. Serve the trout warm, topped with a generous dollop of lemon dill butter.

Notes

  • For a spicier kick, add a pinch of cayenne pepper to the almond mixture.
  • Substitute the trout with salmon or tilapia for a different flavor profile.
