A delicious and healthy recipe for almond-crusted trout served with a flavorful lemon dill butter.

- 2 (6-ounce) trout fillets, skin on
- 1 cup almonds, finely chopped
- 1/2 cup breadcrumbs
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1/4 cup unsalted butter, softened
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- 1 tablespoon fresh dill, chopped
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a shallow dish, combine the finely chopped almonds, breadcrumbs, salt, and black pepper.
- Brush the trout fillets with olive oil on both sides.
- Press the skin side of each fillet into the almond mixture to coat it evenly.
- Place the coated trout fillets, skin side down, on the prepared baking sheet.
- Bake in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork and the crust is golden brown.
- While the trout is baking, prepare the lemon dill butter by mixing the softened butter, lemon juice, lemon zest, and chopped dill in a small bowl until well combined.
- Once the trout is done, remove it from the oven and let it rest for a couple of minutes.
- Serve the trout warm, topped with a generous dollop of lemon dill butter.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the almond mixture.
- Substitute the trout with salmon or tilapia for a different flavor profile.
